About our Speaker
Dr. Keith Harris is an Associate Professor of Food, Bioprocessing and Nutrition Sciences at NC State University. He is an award-winning teacher of both undergraduate and graduate-level courses. His research interests involve the health-related properties of plant foods. His specific area of research examines how processing affects the antioxidant and anti-inflammatory effects of flavonoids and other potentially beneficial compounds in food.
