2005 Q & A

land crabOur first full day in Placencia began with our early morning walk. We saw parakeets, hummingbirds, terns, pelicans, Green Herons, migrating butterflies, and a large land crab, which was chased down the road by Jan. We also had our first glimpse of the Red Mangrove tree, which looks like a tree held up by stilts, called prop roots.

Going out to snorkelBreakfast at Kitty's Place included lobster omelets, fresh tropical fruit, and Creole coconut French toast. Following breakfast we joined our boat guides, Darren and Jason, and boarded 2 boats to venture out onto the Caribbean sea.

About 45 minutes out to sea we jumped in at a reef patch for our first snorkeling experience. It was a sight to see 18 people bobbing up and down and "snorkel talking" with exuberance each time a new species was spotted. Introduction to Belizean cookingWe then boated to French Louis Caye (pronounced "key") where we had a Creole lunch of Yellow-tailed Snapper, rice and beans, coleslaw, fried plantains, and fresh lime juice. Lunch was followed by a relaxing nap in hammocks suspended between palm trees on the shore of the Caye.

Afternoon snorkeling was done off of the Caye. Some of our favorite sightings were the sting ray, Scorpion Fish, and the Gray Angel Fish. We returned to Placencia energized by our day of snorkeling. Our day came to a close with a traditional Mayan meal slow cooked in a pit under the sand. We had Maya Pibil which is cooked chicken and pork cooked in Mayan spices, wrapped in banana leaves and baked.
